Sunday Dinner – Roast Beef



I make some kind of big, yummy, full-on meal every sunday.  Sometimes I try a new recipe and sometimes I just use an old favorite.  I do this on sundays because during the week I don’t have time to get all gourmet.  I heard somewhere always make sunday dinner so family and friends will keep coming back.  It is also a great way to catch up and talk about the week ahead.  But most importantly it is a way for me to use some of my serve ware I don’t use during the week.

This Sunday I made Herb Roasted Beef with Potatoes and Carrots, a recipe that I found a while back from, a website created by Jessica Seinfeld.  I watched her make this on some TV show and tried it myself.  It is actually really, really simple and delicious.  Everyone eats this one – a crowd pleaser!!

Make a couple of Moscow Mules before or after the meal

Moscow Mule Recipe:

2 Oz Vodka

1/2 of a Lime

Ginger Beer

Squeeze half the lime into the mug.  Toss the shell of the lime into the mug along with ice.  Pour in vodka and top with ginger beer.  Garnish with a lime wedge.
